  • cold brew does extract differently. but yes, it's also generally old even when fresh. the stronger i brew it the less stale it tastes to me, so I wind up with a very high brewing ratio of something like 6:1 or less. and i like to drink it neat :-)

  • design challenge: invent a treatment for these access lids that allows them to be swapped around while remaining aesthetically pleasing. it occurred to me that some physical forcing function might keep them in the right order also...

  • enjoying some locally roasted Kenyan beans here lately. been making some extraordinary cups despite some months of lackluster brews.

    also just freshed up the rubber gasket and switched to the single-doser on the encore -- the new gasket seems to give a more precise grind setting and the rubber cap on the single doser makes it a lot less noisy overall. i think the stock hard plastic hopper acts like a trumpet bell.

  • the immersion phase is samey but the slurry is sitting on top of a filter so when you open the switch it gets filtered by gravity pulling the coffee through the paper. contrast with french press (no paper) and aeropress (coffee forced with pressure through the paper)

  • the main thing i generally shoot for pouring-wise is avoiding churning up the coffee bed by over-aggressively pouring. i feel it causes migration of the fines, which is usually detrimental.
